Now on our "top ten favorites" list is Roy's of Hawaii. I have read so many
rave reviews about Roy Yamaguchi's culinary talents, creating Hawaiian Fusion Cuisine to die for, it was certainly to sigh for! His restaurant in Rancho Mirage is under the care of Chef Curtis Mar and was up-to-date modern, and included an open kitchen with white clad chef's eagerly attending to their creations. The warm lighting and tropical nuances provides an easy mood for some serious food. Our visit presented us with a veteran waitress who was not only well versed on the menu, but equally excited about the food she presents. I'm already trying to imagine passing up the dishes I loved on this visit, to try others on our next. I could never tire of this place, not only for obvious reasons, but also for it's ever changing menu with seventy percent of it replaced every day with fresh new items, while creatures of habit can always be assured with "Roy's Signature" dishes. The perfect start was a Roy's Hawaiian Martini with Malibu Rum and Vanilla Stoli infused with fresh pineapple. With so many tantalizing appetizers to choose from, we decided to start with items we haven't had much success with in the past at other restaurants. The Dynamite turned out to be the best softshell crab we've ever had, by far! This came tempura battered and baked with a "dynamite" topping and served with a spicy sesame butter. We are so anxious to return for this again soon. The Yellowfin Ahi "Poketini", served in a martini glass, was unbelievable, with a touch of this and that, that provided so much explode- in-your-mouth flavor, it's indescribable. We were undecided between two of the fish entrees which, as luck would have it, were together in their Fish Combo for $26. One was a mainstay, Roy's Classic Macadamia Crusted Mahi with Lobster Cognac Butter Sauce and the other was the day's special, the Arborio Dusted Island Opakapaka with Basil Asiago Gratin & Roasted Garlic Basil Brie Crab Cream, oh my! Both were absolutely fantastic! Thinking about it right now is making me want to get in my car and start driving. This place haunts me!
